A Different Spin on Lasagna!

You may remember my lasagna post from back in the day…

Well, the other day, I decided to get experimental in the kitchen… I was pleased with the results so I wanted to share the recipe with you

Jumbo Shell Lasagna

Ingredients needed:

1 Package Jumbo Shells

1 lb. ground turkey

3 jars spaghetti sauce (I used Classico Italian Sausage)

1 Container Ricotta Cheese

1 Container Cottage Cheese

2 lbs Mozzarella Cheese

Preparation:

Preheat Oven to 350 Degrees

Cook the ground turkey

Grab 2 baking dishes.

Open 2 jars of spaghetti sauce and line the bottom of the baking dishes with spaghetti sauce.

Line the jumbo shells on the baking dishes on top of the spaghetti sauce

In a separate mixing bowl, combine ricotta and cottage cheese together.  Stir.

Spoon ground turkey into the jumbo shells.

Then spoon the ricotta/cottage cheese mix into the shells.

Cover the pans with the mozzarella.

And layer with the last jar of spaghetti sauce.

Bake in the oven for 45 minutes.

And, of course, I couldn’t have made this fabulous dinner without making something for dessert.

So, I decided to get creative.  A friend showed up to another friend’s house with a batch of cheesecake stuffed strawberries.  And I have seen this recipe flutter around on Pinterest too, so I finally got the nerve to make them on my own.

For the cheesecake I used a recipe that I have been using for years.  A recipe my mom taught me to make:

1 8 oz package cream cheese

1 16 oz container sour cream

1/4 cup sugar (or more, depending on the taste tests)

1 16 oz container cool whip

1 16 oz package strawberries

1 pie crust

Preparation:

Mix Cream Cheese and Sour Cream together in the mixing bowl.  Add in Sugar.  Continue to mix.  Taste to see if more sugar is needed, add to desire taste.

Add in cool whip, blend.

Refrigerate for 1/2 an hour.

Core the strawberries (cut off the stem, and then take out the middle so there is a hole in the middle of the strawberry.

Fill strawberries with the cheesecake mixture.

The cheesecake mixture makes a lot, so I always make sure to have an extra pie crust around to fill up to make an actual cheesecake.  I layered the cheesecake with strawberries and blueberries.

And voila, an amazing meal all because I was feeling a bit bored in the kitchen, and I needed to try something new.
