Salted Nut Rolls!!

First,

I am excited to share this recipe.   I grew up on the candy bar “Pearson’s Salted Nut Rolls.”  Last year, I truly went on a limb and learned how to make these delectable treats.  They GET Messy.  I am warning you.

For me, The Salted Nut Rolls.  Since I’ve been eating these famed Minnesota Candy Treats for quite sometime, I asked the question, “well, can I make them at home?”  I soon found out that I could:

Ingredients Needed:

1 Jar Marshmallow Cream

2 Bag Caramels

1 Jar Salted Peanuts.  

3 Cups Powdered Sugar

Wax or Parchment Paper

Salted Nut Roll

Directions:

In a small bowl mix together powdered sugar with Marshmallow Cream.  When well mixed together.  Begin rolling together in long oval shapes.  Wrap in Parchment paper then place in Freezer.  Repeat process until mixture is gone.  You will freeze these for at least 30 minutes, but I recommend one to two hours.

After enough freezer time, line a cookie sheet with parchment paper and pour 1 cup of peanuts onto the parchment.  Then unwrap your bag of caramels place in a microwave safe bowl then melt (1 min 30 seconds about!)  Mixture will be hot when you take it out.  NOW this is where you need to be really fast.  Take out marshmallow ovals one at a time, unwrap, cover in caramel then wrap in peanuts then place on a cookie sheet lined with parchment paper.  Repeat this process over and over until everything is covered. Your hands will get messy and because of the hotness of the caramel you may want to use gloves.

Let sit for about 30 minutes before serving or wrapping up as nice gifts.  The reason I recommend taking the Marshmallow ovals out one at a time is if you do it all at once they will begin to melt and it becomes an even more messy process.
