Mini Game Day TACO Bites!


One of my favorite time of the years.  Football Playoffs.  Time to bring those friends and family members together to watch the big game.  For those of you have been playing Fantasy Football this year, how did your teams fare?

Over here, we’re pretty excited because the San Francisco 49er’s are still in it, and I’m even more happy because they beat the Green Bay Packers this past weekend.  With all this excitement and energy happening for the playoffs I thought I’d create a fun recipe to serve during the weekend games:

Taco Bites

Introducing my Mini Taco Bites.  Everyone loves a good taco, but imagine them mini sized, and here you have it:

Ingredients needed:

1 Package Mini Phyllo Dough Cups (You could also use Tostitos Scoops)

1 Package Mexican Shredded Cheese

Shredded Lettuce

1 Tomato

1 Small Can Refried Beans.

Mini Taco Bites

Directions:

Take out Mini Phyllo Dough Cups out of package, place on cookie sheet.  Spoon in refried beans.  Top with Lettuce, Tomatoes and Cheese.   Bake in oven at 350 degrees for 5 to 7 minutes.  Take out and enjoy these yummy treats.

Easy to make.  Easy to eat.   The perfect appetizer for game day.

What’s on the “Menu” at Rosenblum Cellars!


Disclosure: I was invited out to Rosenblum Cellars in Healdsburg to check out their new Entertaining Space and partake in a Cooking Demonstration by Chef Joey Altman.  Post may include affiliate links. 

A little over 3 months ago, Rosenblum Cellars added a new home in Central Healdsburg in addition to their Alameda Tasting Room.  Off the plaza strip this is a tasting room worth walking into.

But one thing that makes Rosenblum Cellars even more distinct is their newly added entertaining space.  Rosenblum Cellars has plans to incorporate this space into fun Cooking Demonstrations and other events that will be taking place throughout the year.

Their first cooking demonstration took place this past December where Chef Joey Altman came into the space and held a cooking demonstration for a group of about 30 people to talk Holiday Entertaining.  He gave some great suggestions on easy entertaining ideas along with making 3 recipes of his own:

The great thing about Chef Joey Altman is that he brings easy home entertaining ideas, and his recipes are down to Earth making it completely easy to create these fun loving recipes right at home.  Instead of going out and making reservations at a restaurant in town, he will bring those same favorite recipes and teach you how to make them right at home.

And he’s even done this in his cookbook, “Without Reservations: How to Make Bold, Creative, Flavorful Food at Home.”  Throughout the afternoon he showed us 3 of his recipes all while being paired with Rosenblum wines.

Upon entrance into Rosenblum Cellars we were given a glass of Rose N Blum Bubbly Moscato Rose.  This was a favorite of mine throughout the afternoon.

Also, before being served our Pork Carnitas we were given a glass of  The 2010 Rockpile Road Zinfandel.  Rosenblum is truly known for their Zinfandels.  A bold, fruitful flavor of wine that tasted great with the carnitas.

And for dessert, they served none other than the Desiree Dessert Wine which Chef Joey Altman even utilized within his Tiramisu.  All of the recipes showcased that day were a complete hit, but everyone loved the Tiramisu as a finishing dessert.  Chef Joey Altman has given us permission to share the recipe:

Rosenblum Cellars’ Desiree Tiramisu

Dark Chocolate Mousse:

1 High Quality Dark Chocolate, Chopped into Small Pieces

1 stick unsalted butter

5 egg yolks

10 egg whites

13 oz. sugar (1 1/4 cups)

3/4 cup heavy whipping cream

1/4 cup Desiree

Directions: 

1. Melt the chocolate and butter together over double boiler. Remove from heat and let cool to room temperature stirring occassionally. 

2. In a stand mixer with the whip attachment, whip the 5 egg yolks and 1/4 cup of the sugar on medium high speed to a light pale yellow, then fold into the room temperature chocolate-butter mixture just until combined, be sure not to over mix. 

3. Whip the heavy cream and Desiree to medium stiff peaks; then fold into chocolate mixture.

4. In a clean mixing bowl with the whisk attachment whip the egg whites to a stiff but not dry peaks then fold this into chocolate-cream mixture.  Cover the bowl with plastic wrap and chill for 1 hour. 

2 Packages Lady Finger Cookies

Soaking Syrup:

1 cup Desiree

1/2 cup water

1/2 cup sugar

Bring water and sugar to a boil, allow to cool then stir in Desiree.  

Chocolate Chip Whipped Cream:

1 1/2 cup heavy cream

1/4 cup sugar

1/2 cup Dark chocolate shavings

Whip the cream and sugar to a soft peak then fold in the chocolate shavings.  Cover and chill for 2 hours. 

Assembling Tiramisu:

1. Cover the bottom of the pan with lady fingers dipped in the Desiree syrup until just moistened.  

2. Using an offset spatula gently spread the chocolate mousse over them and repeat it with another layer of soaked lady fingers and mousse then top with a thin layer of whipped cream-chocolate shavings mixture. 

3. Cover with plastic wrap and chill for 2 hours.

4. To serve, cut the tiramisu into 2″ squares serve with a small glass of Desiree. 

Trust me! You will absolutely love this dessert.  I hope you’ll add it to your entertaining dessert list.
