Fall Recipe: Apple Snicker Salad


Back in Minnesota we’d often have a variety of different get togethers where we would discuss the latest going ons, bring up recipes we’ve tried or are interested in trying, and touch base on life happenings, and of course, discuss the latest pitfalls of our beloved Vikings.  During one of these hangouts, the discussion of “Apple Snicker Salad” was mentioned, or perhaps even brought over.  The salad always stayed in my head as a recipe to try out one day.  Well, needless to say, that day has finally come:

Apple Snicker SaladIf you are a lover of sweets you will love this salad.  If you are a lover of apples you will also love this salad.  The best part is truly how easy it is to prepare:

Ingredients needed:

2 cups milk

1 5 oz package vanilla pudding or 2 small packages of vanilla pudding

1 carton cool whip

4 medium granny smith apples, cut up.

1 bag miniature snicker bars

Directions:

In medium mixing bowl pour 2 cups milk and package of vanilla pudding together.  Mix together with a whisk for 2 minutes.  Set in refrigerator for at least 10 minutes.  In the meantime, cut up apples and snicker bars into smaller pieces.  Leave a portion of the snickers to the side (to use as decorative topping.)  Take pudding out of the fridge and mix together pudding, apples, and snickers.  Add in carton of cool whips.  Put into a casserole serving dish then decorate with snickers on top.  Keep cool until time to serve.

See?  Simple.  And lets be honest, it’s the perfect fall treat.

Driving through the Sonoma Coast!


When we’re simply born in a place there are places we go that simply become our favorite.  These places become special to us, and when we get close to others we just want to show them off.  For me, that special place was the North Shore in Minnesota.   The beauty of the shoreline off Lake Superior was simply beautiful, and breathtaking.

And for my other half, his special place was none other than the Sonoma Coast in Northern California.  So, one day we decided to take a trek to the coast so I could see the beauty for myself and what it all meant.

We ended up taking the side roads there going through Sebastapol and Occidental and other small towns along the way stopping off to take pictures along the way.

Once we got to the coast the first town we hit was “Bodega Bay.”  This town has great restaurants with views (The Tides) and also great places to stay.  Hotels include The Inn at the Tides and the Bodega Bay Lodge.  We continued our trek north and soon stopped to view the scenery off the coast:

But then the real fun began as we drove further north.  Once we began to go up and the fog really began to come in our trek, new to me, became adventurous.  As we climbed to higher elevation, and realizing their was a deep fall below us to the ocean below, and as we winded on a two lane highway, the mind took over.

Minutes later we ended up crossing that bridge.  Along the coast there are a variety of turnouts where you can stop to take pictures, and let others pass you along the way and just enjoy the trek up to where you’re going.  There are a variety of places to camp as you head North and of course, did I mention the beautiful scenery?

On our way back we stopped into the Tides Wharf in Bodega Bay for dinner, and I recommend this place for anyone visiting the area.  Great seafood from Mussels to Lobster Tail, pasta dishes, and other entrees related to your end orite seafood.  A perfect way to end your day at the coast.  Of course, for me, it’s the perfect weekend getaway.

Visiting Francis Ford Coppola Winery!


This winery has a special place in my heart for the first wine I ever loved came from the Francis Ford Coppola winery.  That wine, if you must know is the “Sofia.”  The “Sofia” is a blanc de blanc sparkling wine that comes in a bottle, but also in a 4 pack mini pink can.  I can’t remember the occasion where I first had this wine, but from the first time I did I’ve been buying it since so, of course, Francis Ford Coppola, was one of the first winery’s on my list to visit:

The Francis Ford Coppola Winery is on beautiful grounds within Geyersville, CA.  This is about a hour drive north of Sonoma.  As soon as you exit from the freeway, you take a left and the winery is right there.  You first walk up a flight of stairs, and they also have an elevator on the right hand side if the stairs are too much for you.  Once, on top, this gate greets you along with doors to the left.

Once inside you are introduced to movie memorabilia.  This is what they call their “movie gallery.”  Walk along as you remember the films that Francis Ford Coppola was apart of including the car from Tucker: A Man and his Dream.

On the second floor, more movie memorabilia is around including the desk from The Godfather and also the Oscars and awards received from that same movie.  Seeing the desk and the awards right there was pretty surreal.  The second floor also has many things that you can purchase including Francis Ford’s love of bicycles, Eleanor’s love of hats and they even had a Halloween display filled with masks, which was only the right tie in to their Masquerade Ball happening the following weekend (Oct. 26th.)

Their tasting bar was on the first floor past the famed car and this is where you could try out two different flights of wine.  The family style wine (10 dollars) took a look at the Diamond Collection wines.  They included Chardonnay, Zinfandel, Malbec and a Red Blend.  There was also the neighbor’s tasting available for 15 dollars.  These were a tasting of the “Director’s Cut” wines.

They also had a restaurant where you could sit down and eat at which is open daily from 11am to 9pm.  The restaurant “Rustic” focuses around International and American style italian dishes.  The restaurant has a beautiful view of the surrounding Alexander Valley region.

But, for me, the best part of the Francis Ford Coppola winery was the outside area.  Very much, family friendly, was their outdoors pool area.  The pool being open from 11am to 6pm Friday through Sunday through October 27th.

And the best part is that these are free to use daily at no additional charge.  There are a variety of tables along the courses that allow you break out your favorite board game too.

Francis Ford Coppola has not only created a beautiful winery landscape, but a place to bring the entire family.  Will you be making this a future stop the next time you visit Northern California Wine country?
